Ingredients
- 1/2 stick butter
- 1 large onion (chopped)
- 1-3 Green Onions (chopped)
- 2 large carrots (chopped)
- 2-4 stalks celery (chopped)
- 2 bay leaves (whole)
- Fresh Rosemary (chopped)
- Fresh Thyme (chopped)
- Fresh Sage (chopped)
- 3-5 cloves garlic (minced)
- Pinch of ginger (minced) **optional**
- Large bag of egg noodles
- Salt and pepper, to taste (I go heavy on the pepper)
- Water (to build stock)
- Rotisserie Chicken (meat separated from Caracas)
- Knorr Chicken Bouillon
- 3-4 small sugar rocks
Directions
- Step 1
- Separate the chicken meat from the bones and skin. Chop meat and set aside.
- Step 2
- Add chicken skin and carcass with chicken bouillon, sugar rocks, bay leaves and water to large pot and bring to a boil then drop to a simmer for a few hours.
- Step 3
- Strain out all bones and large particles, return the remaining broth to the pot.
- Step 4
- Add in the carrots and celery and cook for 3-5 minutes, then add noodles and cook until done.
- Step 5
- Serve with saltine crackers and sliced cheddar cheese.
