Chicken Fried Steak and Pepper Gravy

Ingredients
- 4 (1/2 pound) beef cube steaks
- 2 .25 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon black pepper
- 3/4 teaspoon salt
- 1 .5 cups buttermilk
- A few shakes of Tabasco
- 1 egg
- 2 cloves garlic, minced
- 3 cups vegetable shortening for frying (Crisco)
- 4 cups milk
- Kosher salt and black pepper to taste
Directions
- Step 1
- Place steaks in zip lock bag and pound to a thickness of 1/4 inch.
- Step 2
- Add 2 cups flour in a shallow bowl. In a second large bowl, stir together baking powder, baking soda, approximately 1 teaspoon pepper, and 3/4 teaspoon salt. Then add already stirred buttermilk, Tabasco sauce, egg, and garlic to the bowl and add more buttermilk as needs of batter is too thick.
- Step 3
- Heat crisco in a deep cast-iron fry pan to 325°
- Step 4
- While the crisco is heating, dredge a steak in flour to coat

- shake off excess. Dip into buttermilk batter and then press in flour again to coat both sides completely. Place breaded steak on the wire rack and repeat to bread remaining steaks. Fry steaks until golden brown throughout, 3 to 5 minutes per side. Remove steaks and place on paper towels to let the fry liquid drain.
- Step 6
- Discard the fat from the pan but keep about 1/4 cup of the crisco fry liquid and as much of the solid frying bits as you can.

- Return the pan to medium low heat

- add some of your crisco cooked oil. Whisk the remaining 1/4 cup flour into the oil.
- Step 9
- Add milk slowly stirring, increase the heat to high, and bring the gravy to a simmer. Cook, stirring often, until thick, 6 to 7 minutes. Season with kosher salt and generous amount of pepper to taste.
- Step 10
- Place 2 steaks or however many you need to fit on top of your bacon cheesy eggs. Then pour pepper gravy over the chicken fried steak.
